Fall
Potatoes should be planted in a high bed prepared in fall. In colder climates, fall planting is common, but Mississippi State University states that fall seed potatoes are difficult to find in Mississippi. Spring planting is more common in this state.
Spring
Gardeners should plant specially purchased seed potatoes of 1 1/2 to 2 ounces each in early spring, using about 1 pound of potatoes per 10 feet of row. Mississippi State University suggests spacing pieces 10 to 12 inches apart.
Dates
Potato planting dates vary depending on local climate. Gardeners in extreme southern Mississippi should plant potatoes from January 20 to February 15, before the weather gets too hot. In colder parts of the state, planting times can be as late as mid-February to mid-March.
