Growing vegetables at home provides the gardener with beautiful plants that produce edible results. While large vegetable gardens exist mostly in areas where space and quality soil are in ready supply, several vegetables thrive in pots or planters. This versatility allows gardeners to enjoy home-grown vegetables, even in a city apartment.
Spinach
Spinach is consumed both in cooked and raw form and provides iron and several B vitamins. Although spinach enjoys lots of growing room in large farms, it does very well in even a small container. This fast grower can be harvested while the leaves are still young and tender or later when they are more mature.
Basil
This tough herb grows in a number of taxing environmental conditions, including cold weather and high altitude. Basil is small to begin with and works well in a small pot provided it has enough sun. Growing basil for vegetable use means pruning back any flowers to allow the leaves to get the lion's share of the plant's energy stores.
Radishes
Radishes are another small plant and while they are a root crop, they also grow easily and quickly in small to medium-sized pots. Radish can be eaten raw and are often found in salads. Cherry Belle, Scarlet Globe and White Icicle are the best varieties to grow in a pot.
Tomatoes
While some tomatoes are simply too big to grow effectively in pots, many adapt quite easily to life in a planter. Varieties such as the Patio, the Tiny Tim, Cherry, Small Fry and even the Spring Giant require at least a 5 gallon planter but grow quickly in the full sun, producing multiple specimens on the same plant.
Baby Carrots
Baby carrots are just the right size for small planters and can often be placed two or three at a time in the same 1 gallon pot. The best varieties for potting are the Gold Nugget, the Little Finger, the Baby Spike and the Thumbelina.
Pepper
Peppers are beautiful and colorful plants that grow well in in 5 gallon planters. Planted two at a time, Jalepeno, Red Cherry or Yolo Wonder pepper varieties grow quickly in full sun with well draining soil.
Cucumber
Salty, Crispy, Liberty or Burpless cucumbers are all well suited for 1 gallon pots. These cucumbers, once harvested, can be made into pickles and stored for months.
